HORCHATA RECIPES
HORCHATA DE CHUFAS
Horchata remains a very popular and refreshing summer drink in the region of Valencia.
INGREDIENTS:
100 gr. chufas
100 gr. Sugar
1 liter of Water
1 Cinamon stick
1. Clean the chufas very well, rinsing them in clean water.
2. When they are completely clean, set them to seak in a lot of cold water for 12 to 14 hours.
3. After this time, rinse the chufa again in clean water, changing the water until it is completely clear, then drain off all the water.
4. Mash the chufa or put them in a blender - to make them into a soft paste. Add a little water if needed.
5. Add the 1 liter of water to the paste that you have made and put in the cinnamon stick. Let it sit in a cool place (like a fridge) for 2 hours.
6. Add the sugar and stir until the sugar is completely dissolved.
7. Now, pass the mix through a metal mesh filter, and then through a wet, damp fine-cloth filter repeat until the strained liquid does not have any large particles left.
8. You now have a fine, milky liguid that can be placed in the fridge to be served cold.
9. You can also serve the Horchata in slushy form as you would ice-cream. Simply put it in the freezer, stirring occasionaly so it does not freeze solid.

- In Spain, it usually refers to orxata de xufes (horchata de chufas), made from tigernuts, water and sugar. Originally from Valencia, it is served ice cold as a refreshment. It has a regulating council to ensure the quality of the product and the villages where it can come from, with the Denomination of Origin. The village of Alboraia is well known for the quality of their horchatas. The idea of making horchata from tigernuts comes from the period of Muslim presence in Valencia (from the 8th to 13th century).
HORCHATA'S LIQUOR:
Although more known like fresh drink, this liquor has one component that converts it in an exquisite combined. Have a look about its secret in the relation of necessary ingredients for elaboration.
INGREDIENTS:
½ Kg. of chufas
1 litter of water
2 cups of rum
1 stick of cinnamon
The crust of half lemon bordered
Chufas main remain in water between 8 and 10 hours to be clean from sand. After you must crush for 3 times, adding the litter of water to get all their juice. Last time strain them without mix remainder with water. Congratulations you have got HORCHATA.
Now add rum to horchata, cinnamon and the crust of lemon. Expert says drink this liquor very cold. Somebody likes add itched ice.
